Katheryn Fuller

Bio

I have a Ph.D. in Nutritional Sciences and more than fifteen years of professional experience in the health sciences across academic and clinical settings. My experience includes nutrition education, scientific research, nutrition assessment, and pediatric and adolescent nutrition. I currently serve as an Assistant Professor and Director of the Didactic Program in Dietetics/Nutritional Sciences at Northeastern State University. I joined NSU as a full-time faculty member in August 2022 and assumed program leadership in January 2023. My current responsibilities include undergraduate teaching, student advising and mentoring, curriculum and program development, assessment, accreditation, and administrative leadership for the Nutritional Sciences program.
